Winner, Winner, Chicken Dinner!

It's time to help a girl out!

I found a smokin' deal on chicken breasts at Smiths, $1.50 a lb. So I bought a quite a bit so I could freeze them................problem.......????

I need some good chicken recipes. I feel like I am always cookin' the same chicken dish. I need some variety!!!! What do y'all make with chicken??

Here's a crock-pot one:

Chicken tortilla soup.

1 package of chicken breast (I've even used it frozen)
2 cans of black beans...undrained.
2 cans of rotel
1 can diced green chiles
1 cup salsa
2 cups frozen corn
1 large can tomato sauce

Dump it all in the crockpot; chicken on the bottom. Cook on high for 6 hours (if frozen chicken, it takes like 8 hours).

Remove the chicken and pull it apart. Then, put it back in.

We serve it with tortilla strips, cheese, sour cream, cilantro and avocado!

A dish that I love is also a crockpot dish. You put chicken breasts, 1/2 cup pepsi or dr. pepper or whatever, 1/2 cup brown sugar and 1/2 cup salsa (peach/mango is the best) into the crockpot and cook on low all day. Then you can shred it up and put it on nachos or a salad or lots of other yummy things. It's delish!

I am SO JUST KIDDING! This really is a great recipe, and I know this because YOU made it for ME just the other night. I just wanted to see if you would think I was totally insane or completely self absorbed.

I'm afraid I'm not much help in this department. We're pretty boring on the chicken front here. It's usually either chicken & rice, chicken enchiladas or BBQ'd chicken and I bet you already know how to do all of that.

That first recipe sounds really good though, I'm going to have to try that one.

I just found this one awhile back, I haven't had a chance to try it yet, but it sounded interesting.
(except for the asparagus, Yuck)
I think Dad might like it, as long as I didn't call it a "Casserole".

Chicken Tortellini Casserole

Ingredients

1- 19 oz. Pkg. Frozen cheese filled tortellini
1 - 9 oz. Pkg. Green giant frozen asparagus cuts
1 - Tbsp. Margarine or butter
¼ Cup progresso Italian style bread crumbs
3 - 4 chicken breast; cooked and diced
1 - 16 Oz. Jar Alfredo pasta sauce
Fresh shredded parmesan cheese

Directions

Bring 4 quarts water to a boil in large pan; Add tortellini, return to a boil
Reduce heat to low; Add asparagus
Simmer 3 -5 Minutes or until tortellini are tender; Drain
Meanwhile, melt margarine in small nonstick skillet, over med/high heat;
Add bread crumbs; stir to coat
Cook 1 to 2 minutes or until golden brown; stirring constantly; remove from heat
Place cooked tortellini and asparagus in a 2 quart serving bowl or casserole dish
Gently stir in chicken and alfredo sauce; top with bread crumbs
Sprinkle with parmesan cheese
Serve immediately

Serves 4 - 5

Hmmmm...I don't have the recipe in front of me, so it'll be fun to see how much I can remember. I call this Sweet and Spicy Chicken. Saute onions and diced peppers (any color bell pepper you like). Once that starts sauting, add bite-sized chicken. Add some taco seasoning to the mix. Then add whatever veggies you like. I usually add broccoli or zucchini or peas. Whatever you have on hand and like will do. Then for the sauce you add oyster sauce, honey, and maple syrup. I know, it sounds crazy, buy I promise it's good. I don't ever measure any of these three items, but it's probably 3 T honey, 1/4 cup of maple syrup and a 1/3 cup of oyster sauce. But you can't really go wrong...they're all good. Then taste it. If it's too sweet, add more taco seasoning, too spicy? Add more syrup or honey. Once it tastes how you like it, serve over rice.

My standby that I have memorized!!
Chicken Poppyseed Casserole
pkg chicken breasts (you can stretch this or add 4/5 breast) I usually use 3 good size breast.
can cream of chicken soup
pkg ritz or saltine crackers
poppyseeds
1/2 to 3/4 stick of butter
16 oz of sour cream

Boil chicken and then cube throw ontop of your butter in a sprayed 9x9 pan. (melts the butter). Then put the soup, sour cream, poppyseeds and mix it all up. Lastly, crush you crackers and mix them all in. Bake on 350 for about 45 min. Should be pretty solid/sometimes it is alittle more gooey. it should be kinda brown on top.
I have been making this for 15 years. Every man in my life has always raved about it!!
