Yummalicious!
Since yesterday was the first day of October, we started our tradition of something festive EACH day!
Yesterday we got out our Halloween decorations, watched Disney's Haunted Mansion and made these FABULOUS Pumpkin Cupcakes! I didn't get a picture before they were all gone, so just imagine the cutest little pumpkin treats with cream cheese frosting piled on top!
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp of cinnamon
1/2 tsp of pumpkin pie spice
1/4 tsp of nutmeg
1/2 cup brown sugar
1/2 cup sugar
1 stick of melted butter
2 eggs
8 ounces of pumpkin puree
Preheat oven to 350, line muffin pan.
whisk flour, baking soda, baking powder, salt, cinnamon, pumpkin pie spice and nutmeg. set aside.
In large bowl whisk together brown sugar, sugar, butter and eggs. Add dry ingredients, whisk until smooth. Add Pumpkin Puree.
Pour each muffin fill about halfway, bake about 20 minutes
Top with cream cheese frosting.
Makes 1 dozen

I have been looking for a great pumpkin cupcake recipe--I will try this one out-YUM!!

Now if only my weather would get with the program, 80's and 90's just isn't going to cut it for me.
